Recipe for Tapenade Black or Green
The ingredients for the manufacture of a good green or black Tapenade for 4 to 5 people :
– 250 g green or black olives
– 5 anchovy fillets
– 125 g capers
– 12 cl extra virgin olive oil
– fresh ground black pepper
– 1 fresh garlic clove
How to do :
Crush generously pitted olives, anchovies and capers in a mortar
Do not use electrical or not chop too fine your mixture, it loses its texture.
Add olive oil by an almost continuous stream
Mash together until blended.
Add salt, pepper, garlic, and other seasoning to your taste
For us it’s Provencal freshness and quality of the olives that give a balance to the mix
If the tapenade is prepared the day before the tasting is better.
The preparation time is about 1/2 of h. No cooking
